Chicken Drumsticks
Chicken drumsticks were a buck cheaper a pound than chicken wings! A little Pineapple Head rub, 375 deg 50 minutes direct on a raised grid. Basted with Danny's Baldheaded Sauce (sweet and hot) and cooked for about 5 more minutes. Skin was nice a crispy. Another successful experiment!

BBQ Chicken Pizza - Yum
Pizza on the Big Green Egg has become a favorite at our house. It is easy to make and we have had great results.
This pizza has a fairly thin crispy crust.

This pizza has a fairly thin crispy crust.
Ingredients:
- Pre-made Pizza Dough Ball ( I get mine at Publix ) (I think this is the dough they use for their Italian Bread)
- Chicken (1 or 2 breasts depending on desired degree of meatiness)
- Barbecue Sauce
- Shredded Mozzarella Cheese (about 8oz )
- The Dizzy Pig - Pineapple Head Rub <Link to The Dizzy Pig>
- Pineapple Chunks - (about a cup)
- General purpose flour. (a few tablespoons aid in working the dough)

- Calphalon Pizza Pan < Pizza Pan Link >
- Plate Setter (BGE)
- Big Green Egg - 350-400 degrees
- Big cutting board for cutting up the wonderfulness
Steps:
- Set the Pizza Dough out on the counter for one hour. This is the final rise.
- Apply Rub to Chicken ( I use boneless skinless breast )
- Fire up the Big Green Egg and set to 350-400 degrees. NOTE: The Calphalon Pan is only rated to around 400 degrees.
- Once the grill is up to temperature cook the chicken (approx 5-10 minutes depending on thickness). Remove chicken from the grill
- Put the plate setter on the grill, feet down, close the lid and allow the heat to stabilize at 350-400
- Cover the chicken and let it rest until you are about ready to roll out the pizza dough, then cut into small bite size chunks.
- Once the hour wait for the dough is completed, remove it from the bag and dust it and your hands lightly with flour.
- Plop the dough into the center of the pizza pan and mash and stretch it till it is almost fills the pan. This will take a few minutes. It is ok if it is not perfectly round. Check the web for better instructions.
- Spoon on a thin layer of BBQ sauce. Spread to within a half inch of the edge of the dough.
- Distribute the cut up chicken pieces across the sauce. A little is ok, a lot is better.
- Distribute the pineapple chunks evenly.
- Spread the cheese across the top of the pizza until it looks yummy.
- Place the loaded pizza pan directly on the plate setter and let it cook for 20-30 minutes until the bottom of the crust is browned and top starts taking on some color.
- Remove the pizza from the grill and slide off onto large cutting board and divide up the goodness.

My Egg Comes Home
I decided to buy Martha a Large Big Green Egg for her birthday. Surprise! 2 Weeks Early.
I did some phone shopping and found the local Pinch A Penny Pool Store (#2 in Seminole FL) was running a BGE package special and a 10% store coupon. They were very friendly and helped me load the egg in the back seat area of my pickup truck. A few days later even they sent me a thank-you note!
Setup was easy and since all the basics were included in the package, I was quickly ready for my first cook.
